HOW TO MAKE

GOURMET HERBAL CHEESE

This is so simple, you'll be amazed! This is a recipe for herbal, soft cheese but I will also let you know how to keep it plan if you prefer that. PLEASE READ through entire recipe a couple of times to get a feel for it before trying it.

* I will show you the 1 batch recipe but I DOUBLED UP as it makes it more time effective to make more than 1 batch at a time!  If you decide to make all 2 or 4 batches, MAKE SURE you have room in your fridge?

* If you used: 1- 4Litre jug whole milk & 1 Litre buttermilk you can make 4 cheese batches!
 

1 BATCH NEEDS:

1 quart- 3-4% milk

1- cup buttermilk

2 tsp. lemon juice

TOOLS NEEDED:

Sauce pan

Stirring spoon/utensil

Measuring cup

Cheese cloth/clean tea towel

Thermometer

Colander 

Small bowls/moulds

Small plates/saucers/trays

 

DIRECTIONS:

Measure out your ingredients and get your cheesecloth in colander ready. Will you make 1 batch? A double batch or a quad?

Heat the milk on medium heat until it reaches 175 degrees F. Stir gently to make sure it isn't sticking to bottom of the pot or burning.

You'll notice the milk getting frothier as it approaches 150 degrees F. Good...patience. Keep stirring slowly. When it reaches 175 degrees F, remove from heat.

Pour in the buttermilk and stir. Pour in the lemon juice and give it a stir. Notice how it almost instantly curdles?

Let stand 5 minutes. This is curds and whey.

Yuck! The whey looks like yellow water. The curds are the white chunks.

Place the colander in a clean sink and pour the curds and whey into the cheesecloth.

Collect the edges of the cheesecloth up and tie them. Let hang for about 15 minutes.

Open up the bundle.

At this time, if you want plain cheese for eating or adding to a food, simply sprinkle salt on it, scoop in a small bowl, press down gently and place in fridge for 1/2 hour or salt it and sprinkle on food.

TO MAKE HERBAL CHEESE:

Sprinkle herb mixture in bowl bottom. Alternately  sprinkle curds in the bowl and then add more herb mix. Here I have made 2 types of herb mix: One is garlic powder, onion powder, oregano, basil and salt. The Other is garlic powder, dill and salt. You MUST ADD SALT or the flavour is flat!

When you have used the last of the curds, sprinkle herbal mixture on and than flatten it by pushing down into the bowl.

 Place in fridge for 15 minutes.

Put a small plate or tray on the bowl and flip it.

Give it a good shake and then place it plate down. Lift off the bowl.

 Sprinkle with more herb mix.

You can taste it but the longer you let it sit in the fridge the better it tastes.

TRY different herb and spice combinations. You can even add fruit or hot peppers.
